I am a Huge Fan of Chinese Food.I always love to enjoy Chinese Food.Recently I have become a Pro in Making Chilli Chicken( Chilli Paneer) and Fried Rice.I am super excited to share the recipe with all you guys.



Before starting to cook let's just know about this food a bit.

Indian-Chinese cuisine originated in India and is a uniquely South Asian phenomenon, drastically different from the Cantonese Chinese cuisine available in the U.S. Towards the end of nineteenth and start of the twentieth century, Hakka-speaking Chinese immigrated to the eastern Indian city of Kolkata (formerly known as Calcutta) to work in tanneries, ports, and railways and soon established the country’s only Chinatown. Then they made their  own cuisine with Indian twist with the availability of Spices in Kolkata.

If you ever visit China then you will surely come to know that every Chinese House has their own Recipe Of Making chili chicken and Fired Rice.Here I am sharing with you,people, my  easy version of Making Fried Rice and Chilly Chicken.



Ingredients required for making Ved Fried Rice.(2 serve)


  1. 2 cups of  Cooked Basmati Rice(of Any variety)
  2. 2 table spoon of Oil
  3. 1 table spoon of Finely Chopped Garlic.
  4. 2 table spoon of Chopped Onion.
  5. 1 table spoon of Chopped Ginger
  6. 1/2 table spoon of  Chopped Green chilly.
  7. 2 table spoon of Finely Chopped Carrot
  8. 2 table spoon of Finely Chopped Cabbage 
  9. 2 table spoon of Finely Chopped Beans.
  10. 1 table spoon of Finely Chopped Capsicum
  11. 1/4 table spoon of Peas
  12. 2 table spoon of Soya Sauce
  13. 1  table spoon of table Spoon Of Viniger.
  14. Water
  15. 1 table spoon of Ghee.
Once you have collected all the Ingredients,Let's start making delicious Veg Fried Rice.


Steps for making Veg Fried Rice :-

  1. Take a pressure cooker and Cook the Basmati Rice until it's 80% done.
  2.  Take a pan and heat it (Pre-Heated Pan is  essential to cook the vegetables nicely)
  3. Add 2 table spoons of Oil and spread it evenly.
  4. Add 1 table spoon of Finely Chopped Garlic, then stir it for few seconds but let it turn brown.
  5. Add 2 table spoon of Chopped Onion ,1 table spoon of Chopped Ginger and 1/2 table spoon of  Chopped Green chilly. Stir it properly  but don't let it turn brown.
  6. Then add 2 table spoons of Finely Chopped Carrot,2 table spoons of Finely Chopped Cabbage,2 table spoons of Finely Chopped Beans,1 table spoon of Finely Chopped Capsicum and 1/4 table spoon of Peas.Cook them properly for 1 min.
  7. Add the cooked Basmati Rice to the Pan.
  8. Add 2 table spoons of Soya Sauce and 1  table spoon of Viniger.
  9. Add a Dash Of Water 
  10. Stir the mixture nicely for 3 mins
  11. Lastly,add 1 table spoon of Ghee and mix it well.
Veg Fried Rice



And Your Veg Fried Rice is ready to serve but now it's time to Make Chilli Panner.

Ingredients required for Making Chilli Chicken 


FOR MARINATION:

  1.  500 g chicken.
  2. 1 egg.
  3. 3 table spoons of Finely Chopped cornflour.
  4. 1  table spoon of Finely Chopped all purpose flour(optional).
  5. 1 table spoon of  black pepper powder.
  6. 2 table spoons of soya sauce.
  7. 1 table spoon of Finely Chopped salt.
  8. 1 table spoon of Finely Chopped ginger garlic paste.
  9. Refined vegetable oil for deep frying.
FOR GRAVY:
  1. 1 medium size onion cut into cubes.
  2. 1 medium size capsicum cut into cubes.
  3. 2 table spoons of Finely Chopped Garlic.
  4. 1 table spoon of Finely Chopped Ginger.
  5. 2-3 green chilies
  6. 4 table spoons of tomato sauce
  7. 2 table spoons of red chili sauce
  8. 1 table spoon of  soy sauce
  9. 1 table spoon of vinegar
  10. 1 table spoon of salt
  11. 1 table spoon of red chili powder(optional)
  12. 3 table spoon of corn flour
  13. 250 ml of water
  14. 2 table spoons of sesame oil or any refined oil
Now if you have all the ingredients ready,Let's start cooking

Steps 

  1. Take 500 g chicken in a bowl, then add 1 table spoon of  black pepper powder,1 table spoon of  salt.2 table spoon of soya sauce and 1 table spoon of Finely Chopped ginger garlic paste.
  2. Then add 3 table spoon of cornflour and  1  table spoon of  all purpose flour(optional). Mix it well half the amount of egg.
  3. Once you have mixed it nicely then keep the mixture for marination of 1/2 an hour.
  4. Take a Pan and pre-heat it.
  5. Then add descent amount of oil to deep the chicken( there should gab between the chicken while frying,so that they don't stick to each other.)
  6. Once frying is over,take another pan, add 2 table spoons of  sesame oil or any refined oil and spread it evenly.
  7. Add 2 table spoons of Finely Chopped Garlic,1 table spoon of Finely Chopped Ginger and 2-3 green chilies then saute it for 35 seconds.
  8. Add 1 medium size onion cut into cubes and 1 medium size capsicum cut into cubes then cook for 1.5 mins or 2 mins.
  9. Add 4 table spoons of  tomato sauce ,2 table spoons of  red chili sauce ,1 table spoon of  soya sauce ,1 table spoon of vinegar,1 table spoon of red chili powder(optional) and 1 table spoon of  salt then mix it well.
  10. Now add the Fried Chicken to the mixture and mix nicely.
  11. Mix 250 ml of water with 3 table spoons of  corn flour.
  12. Add the corn flour mixture to the chicken mixture and cook for few more minutes.



Now your Chilli chicken is ready to serve.

If it ever happens that you are in West Bengal (Especially near Kolkata and Midnapur) and you love sea food then Digha is absolutely a place for you to visit. Digha is a seaside resort town in the state of West Bengal, India. It lies in Purba Medinipur district and at the northern end of the Bay of Bengal. It has a low gradient with a shallow sand beach. It is the most popular sea resort in West Bengal. We all love to enjoy the pleasant climate of places near sea. Isn't it? If you do then do let me know in comment section down below. I had the beautiful opportunity to visit Digha in the months of January. Here I am sharing the beautiful experience of mine with all of you my readers,do seat back and enjoy!

Day 1
So I boarded in train from Khagraghat Railway Station. Around 5 a.m,I arrived at Howrah Railway Station. I had near about 1 hour and 30 mins to kill. Then I went to the rest room to freshen up and had some Tea to keep myself warm in the chilly cold morning. Then I invested my rest of the time to do photography of the surrounding area. Around 6:30 a.m. I got ready to catch Tamralipta Express.

Day 2
Around 10 a.m,we arrived at Digha station. From there booked cabs to our hotel. As My hotel was near the beach, I had the opportunity to experience the soothing climate of the place. After having lunch,I decided to visit the beach.The beach was pretty, much crowded but still I managed to find a place from where I can enjoy the view. There was something mysterious about the to and fro motion of the waves of water.The beach was so welcoming that I didn't realize  how I had  spent 4 hours.They were people around me and some were enjoying in taking bath in the sea. Some were playing with sand,some were enjoying sun bath while I chose to enjoy in taking pictures of the surrounding along with coconut water.

While heading back, I came across a beautiful mini-market where attractive stuff were sold.I couldn't help but became busy in shopping stuff.

Around 8 p.m,I headed towards a local restaurant to have some seafood. For non-vegetarian like me,it was one of the best sea foods I have ever had. After having my meal, I went back to Hotel





Day 3
I woke up around 4 a.m. in the morning.Within 5 a.m. I managed to get ready.Then my cab came to take me to enjoy rest of the area like Shankarpur which was 18 km away from Digha. Are you one of those people who enjoy drive at dawn? Well,I am one of those crazy person who enjoys drive during the dawn. But it was my misfortune that there were some issues with our car after 10 k.m. Around 8:30 a.m. after fixing the issues,we started our journey again. I was mesmerized by the beach view of Shankarpur,it was empty,peaceful and  beautiful. The wait to come to this beach was completely worth of it. I was lucky enough to enjoy my breakfast with the beautiful view of the beach.

Around 12 p.m,I came to visit Chandaneswar Temple. The temple was pretty andmuch crowded. This Hindu temple was dedicated to Lord Shiva. Although the place was crowded but still it offered some positive vibes to me.After visiting the temple,I felt my soul was completely clam and cool.

I decided to have lunch and then head towards Digha Mohona Watch Point.Digha Mohona Watch Point offers a beautiful sea beach which is a good place to relax to have quality time. I was lucky enough to see some of the sand works near the sea beach.

 There is also Digha Mohona International Fish Market which I will suggest you to visit only if you a non-vegetarian and can withstand foul smell of the place. After witnessing the amazing Sunset of the place, I decided to explore the fish Market.Around 8:30 p.m. after having satisfied with dinner in one of the local restaurants, I came back to the Hotel.





Day 4
 This day I was a bit sad as I had to leave this place with soothing climate and get back to my normal life. But I had nothing to do except for the fact that I had to pack  my bags again and catch my train  around 9 a.m.

The Recipe of Indian Khulfi at Home:the_foodie_bengali_girl.




Making Indian Khulfi at Home is a super easy task if you all have the right ingredients and a little patience.
Here I am sharing with you the recipe by following which you can make more delicious Kulfi at home than those  available at Market.This recipe is for Eggless Khulfi which doesn't need any Machines.

Before starting to make.......let's know a bit more about this Dish.
Khulfi is also known as "Traditional Indian Ice-Cream". It does have similarity with Ice-cream in appearance and taste but it's more denser and creamer than ice-cream. It is a popular frozen dairy dessert throughout India,Pakistan,Bangladesh,Nepal and Burma. It is also known as a healthier version of Ice-Cream.To look at the Historical background of this Dish,the word "khulfi" is derived from a Persian word for covered cup.The dessert likely originated from Mughal Empire at 16th century.

Let's start with the ingredients-

  1. Full cream Milk-1 kg
  2.  White Sugar- less than 500 gm( approx 250 to 300 gm)
  3. Elaichi ( Also known as Elaci in English)- 4 to 5 grinded or you can also use powder 2 table spoons
  4. Almonds- 4 to 5 chopped 
  5. Peanuts-  4 to 5 chopped
  6. Pistachio- 4 to 5 chopped
When you are done with collecting all the ingredients ,Let's start with making the yummy Khulfi

Steps-

  1. Pour 1 kg Full Cream Milk in an utensil(which you can use for boiling the milk)
  2. Bring the milk to boil in high flame for 5 mins, then again 5 mins in low flame alternately and keep stirring the milk continuously. 
  3. Boil the milk till it reduces to 1/3 of the original quantity.
  4. Now add sugar to the amount of sweetness you want in your khulfi.
  5. Add 4-5 chopped Elaichi(Elaci) or 2 table spoons of Elaichi(Elaci) powder 
  6. Keep Boiling the mixture for next 5-7 mins or until sugar melts completely.
  7. Switch off the flame and pour the mixture of Khulfi in container you want to freeze.Special container are available in the market to freeze the Khulfi(you also use khulfi mould)
  8. After preparation of the khulfi mixture

    Sprinkle the chopped Almonds,Peanuts and Pstachio over the container.

  9. Then keep container in deep freezer to freeze over night.
  10. Next day take container out of freezer, decorate it the way you want before serving.
  11. Khulfi ready to serve!

Pelling is a small hill town located in the district of West Sikkim, nestled at an altitude of 2,150 m (7,200 feet). It is the most beautiful hill town I have ever visited. If you are a mountain-lover, you will definitely enjoy visiting this place. A brief description of the journey through my eyes is as follows

Day 1
 For reaching this beautiful hill station, we took a train to New Jalpaiguri Station. Around 4.10 am at the dawn we arrived at the station. From there we booked a car to Pelling. The drive to Pelling was around 10-11 hours surrounded mesmerizing scenic beauty.

After a tiresome journey as we reached our Hotel named Hotel Dikiling the view from our hotel was awesome.I remember that I was sitting for a hour enjoying the view.

After having our lunch and rest,we decided to hike to the helipad. The view from the helipad was something to die for. The place enchanted me in the sense as if it was telling me to stay there forever.

Around 6 to 6:30 pm we returned to our hotel. Then we went to explore the hill town. At first we had veg momos and thupas that were sold in restaurant in front of our Hotel. Those momos and thupas were the most delicious once I ever had. Then we headed to explore the city around for shopping. The stuffs were very expensive in comparison to Gantok. So, we bought very little stuff. Have you ever had ice-cream during freezing cold night? Being an Ice-cream lover,I couldn't miss the opportunity to have ice-cream during freeing cold night.  Trust me it was beautiful experience. I suggest you to go for it. Being tired after a wonderful day we came to hotel.


It is a different feeling to enjoy ice-cream during freezing cold night.



Day 2
I woke up  at  5 am to witness the beautiful sunrise of the hill town. Then I got ready to explore the day. Our cab came to pick us around 8 pm.  Kanchenjunga Falls was the first place to be explored. Noted for its mesmerizing beauty and grandeur, the Kanchenjunga falls near Pelling serves as a perfect picnic spot to be travelled with family or friends. For the convenience of visitors, certain infrastructural changes have been made at the very spot. This include setting up of small cafes and stalls in the vicinity of these wonderful falls.

 Next we headed to Khecheopalri Lake.The lake is sacred for both Buddhists and Hindus, and is believed to be a wish fulfilling lake. The local name for the lake is Sho Dzo Sho, which means "Oh Lady, Sit Here". The popularly known name of the lake, considering its location is Khecheopalri Lake, ensconced in the midst of the Khechoedpaldri hill, which is also considered a sacred hill.There is also a monastery near the lake which is used for worship purpose.

 We came back to our hotel for lunch.The food they served was delicious.After having lunch we decided to explore the other part of the hill station.So we headed towards Phamrong Falls. Phamrong Waterfall is the highest waterfall of Sikkim. Set in the midst of lush greenery, this Waterfall cascading down the magnificent Khangchendjonga Range presents a transcendental spectacle especially during the rainy season. A gentle gradient footpath takes one to a viewpoint for a closer view of this mighty discharge of water. The water gushing down the rocky plateau creates an amazing vista of a play between water and rocks. Tourists capture very beautiful views both from the top and the bottom of the Waterfall.

 Singshore Bridge( Asia's second highest suspension bridge ) was our last destination of the day. The view from the Bridge was breath taking. With lush green mountains on all sides, the forceful wind hits your face and you can hear every possible sound. A faint sound of water flowing through the steep edges can be heard. It is bliss to stand on that bridge. There are a few shops that sell chips and other eatables. Do buy something for the return journey? This 500 m bridge connects two hills of the Himalayan Range and also leads to the no-mans-land of the Indo-Nepal border. There is a huge valley that runs right under the bridge at a depth of 600 ft.





Day 3

It was the last day in Pelling. We packed our bag all ready to leave Pelling but there was something in that place telling me to stay back. I was kind of enchanted by the beauty of this place.Somewhere in my mind I decided to visit this place again.
